These were put together using the desktop version of the site, but the process is the same since the mobile version is identical. However, below is a mobile-centric version I just put together. This was using iOS, but it will be basically the same on Android:

The image you want to post has to be saved on your device. On the webpage of the image, long press on it until you get a dialog asking you if you want to save. If one doesn't appear, take a screenshot and then crop it:
When happy with your crop, select "Done" on the top left and be sure to save it to Photos:
In the post, press the Imgur "i" icon. A dialog will appear asking where you want to upload media from. Select "Photo Library" and then select the image you cropped:
After hitting the "Add" button on the top-right, Imgur will start to upload the image. There will be a status bar at the bottom that moves back and forth, it is often hidden so a slight scroll down will show it. After a few seconds to about a minute, depending on your connection speed, the image will be upload and Imgur will automatically insert the "IMG" tags and the image URL:
Once the image URL is inserted you can finish composing the post as you normally would.
